18 steps to getting the perfect jollof rice without tomato

Not your regular jollof rice this time. This one’s with a twist and best part is that it’s super duper easy to prepare…have to give my sister credit on this one because she did an awesome job.

So to get straight to the point here are the easy steps to follow to having yourself a good meal

You could change up the measurements depending on the quantity you wish to make

Ingredients 

 Paprika Peppers (4)
 Scotch bonnet (1½ ) 
 Onions (3)
 Garlic Cloves (3)
 Rice (3 Cups)
 Stock (Meat/Chicken) (3 Cups)
 Seasoning 
 Thyme
 Rosemary
 Curry
 Bay leaves
 Cinnamon 
 Salt 
 Pepper
 Oil
 Water
 Vegetables (Chopped vegetables of your choice)

 

Equipment and Utensils Needed

 Saucepans with Lids 
 Blender
 Sieve 
 Bowls
 Chopping board
 Kitchen knife
 Kitchen cooking spoons
 Measuring cups (Optional)
 Foil paper 

 

Steps 

1) Blend together Scotch bonnet, Paprika peppers, Onions (2) and Garlic with about ½ cup of water 
2) Bring blended mixture to a simmer on low heat till dry enough 
3) Meanwhile wash the rice in cold water till the water runs clear 
4) Bring water to a slight boil and parboil rice (10 minutes) to help reduce starch content 
5) While rice is on the heat, chop the onion (1) and vegetables and set aside 
6) Take the blended mixture off the heat and set aside
7) Take the rice off the heat and rinse in cold water and set aside
8) In a saucepan heat about 2/3 tablespoons of oil (to your preference)
9) Add the chopped onion to the oil and fry (5 minutes)
10) Add a teaspoon of curry to the oil, ½ a teaspoon of thyme, rosemary and cinnamon, 2/3 bay leaves and a pinch of salt.
11) Stir and add in the blended mixture to the oil and fry. Stir continuously (5 minutes)
12) Add the Meat/Chicken stock. Stir and bring to a boil
13) Add salt and pepper to taste 
14) Add the washed rice to the pot. Stir and cover with foil and cook on low heat (20-30 minutes)
15) Check occasionally.
16) Few minutes before rice is fully cooked, add the chopped vegetables and cover to let steam.
17) Once rice is cooked stir and set aside. 
18) ENJOY!!!
