Just for context, I’m Nigerian, so I do like my heat to a considerable amount. That being said, adjust accordingly. Also, I’m well aware some ingredients might not be accessible to all, so feel free to adjust : ) Enjoy…

Ingredients

  • 2 lbs chicken wings
  • 2 tablespoons paprika
  • 1 large onion, finely chopped
  • 2 tablespoons suya spice
  • Habanero pepper( as much heat you can handle)/ dried Cameroon pepper
  • 3 cloves garlic
  • 2 tablespoons olive oil or any of your choice
  • Salt and pepper to taste/ seasoning cubes
  • Kuli kuli( groundnut/ peanut cake). Or better still, measure ingredients according to your ancestors

Instructions

  1. Preparation of Marinade:
    • In a large bowl, combine the paprika, suya spice, minced garlic, olive oil, and season with salt and pepper.
    • Add the chopped onions and habanero mixing well.
  2. Marinate Chicken Wings:
    • Add the chicken wings to the marinade, ensuring each wing is well coated.
    • Cover the bowl and refrigerate for at least 1 hour (or overnight for best flavor).
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat.
  4. Grill the Chicken Wings:
    • Place the marinated chicken wings on the grill.
    • Grill for about 20-25 minutes, turning occasionally, until the wings are cooked through and have a nice char.
  5. Serving:
    • Serve the grilled chicken wings hot, garnished with lime wedges and additional sliced peppers if desired. I used micro greens and cabbage for mine.

Enjoy your flavourful grilled chicken suya wings!
